Healthier Blueberry Muffins

I love a good homemade snack that is filling, delicious, and nutritious. My go-to is muffins because they are portable and filling but I couldn’t find the perfect recipe - they were either too healthy tasting or too filled with sugar. I think I finally put together the perfect recipe :)

Ingredients

Makes 12 muffins

2 cups 1:1 Bob’s Red Mills GF flour. I have not tried it with regular flour but I think it would do just fine with 2 cups of regular flour.

1 cup almond flour

1/2 cup brown sugar

2tsp baking powder

1/2 tsp salt

3/4 cup Greek yogurt - I used 0% fat but they would do great with whole milk yogurt too.

2 eggs

1/2 stick butter melted

1/4 cup maple syrup or honey

2 tsp vanilla extract

1.5 cups frozen or fresh blueberries. I have also done strawberry and banana. Any fruit will do.

Optionals:

4 Tbl Vital Proteins collagen powder for some extra protein

1 tsp almond extract - love the taste of this with the blueberries

Directions

Turn oven on to 425 degrees. Use silicone muffin liners (my fav bc they are reusable and nonstick) or spray your muffin tin down with oil. Mix all dry ingredients together in one bowl and wet ingredients together in another bowl, leaving out the blueberries. Combine the wet in to dry ingredients, adding in the blueberries. It will be very thick and hard to mix. Take your time mixing it well. Spoon the batter into your muffin tin.

TURN THE OVEN DOWN TO 350 degrees and put the muffins in. Cook for 30-35 min or until golden brown. Let sit out for 5 minutes, then ENJOY :)
